These crispy Air Fryer Asian Veggie & Tofu Rice Paper Rolls are a light, flavorful, and protein-packed option perfect for lunch, dinner, or a satisfying snack. They’re easy to prepare, filled with fresh veggies, and made even better with an air-fried crunch. All while staying midlife-friendly.
Ingredients
- 8 rice paper rounds
- 1 block (14 oz) extra-firm tofu, pressed and crumbled (or finely diced)
- 1/2 cup shredded carrots
- 1/2 cup shredded cabbage (green or napa)
- 1/4 cup red bell pepper, finely diced
- 2 green onions, thinly sliced
- 2 cloves garlic, minced
- 1 tsp fresh grated ginger
- 2 tbsp low-sodium soy sauce (or tamari)
- 1 tsp sesame oil
- 1 tbsp almond flour
- Cooking spray
Directions
- Preheat air fryer to 375°F (190°C).
- In a skillet over medium heat, sauté the crumbled tofu with garlic, ginger, soy sauce, and sesame oil for 5–6 minutes until golden and most moisture has evaporated. Allow to cool slightly.
- In a bowl, combine tofu with carrots, cabbage, bell pepper, green onions, and almond flour.
- Soak each rice paper sheet in warm water for 10–15 seconds until soft and pliable.
- Place about 1/4 cup filling onto the lower third of the wrapper. Fold the bottom over the filling, tuck in the sides, and roll tightly.
- Lightly spray each roll with cooking oil and place seam-side down in the air fryer basket.
- Air fry for 12–15 minutes, flipping halfway, until crisp and lightly browned.
- Cool 2–3 minutes before serving. Enjoy with soy sauce or peanut sauce.
