One-Pan Lean Beef Taco Wrap

This One-Pan Lean Beef Taco Wrap is a quick, high-protein meal perfect for busy days. It’s flavorful, satisfying, and made with nutrient-dense ingredients that support balanced energy and blood sugar. They’re ideal for a midlife-friendly lunch or dinner.

Ingredients

  • 1 high-fiber tortilla wrap (8-inch)
  • 4 oz extra-lean ground beef (96–98% lean)
  • 2 tbsp black beans, rinsed and lightly mashed
  • 2 tbsp diced onion
  • 1 small garlic clove, minced
  • 1/2 tsp chili powder
  • 1/4 tsp cumin
  • Pinch smoked paprika
  • Salt & black pepper, to taste
  • 1 tsp shredded light cheddar (or nutritional yeast)
  • 1/4 cup shredded lettuce
  • 2 tbsp diced tomato
  • 1 tbsp plain nonfat Greek yogurt

Directions

  1. Heat a nonstick frying pan over medium heat. Add the ground beef, onion, and garlic. Cook 3–4 minutes, breaking up the beef as it cooks.
  2. Stir in mashed black beans, chili powder, cumin, smoked paprika, salt, and pepper. Cook 2–3 more minutes until the beef is browned and the beans blend in.
  3. Spread the beef mixture over one side of the tortilla. Add cheese or nutritional yeast.
  4. Fold the tortilla in half and return it to the pan. Cook 1–2 minutes per side until crispy and golden.
  5. Remove from pan and fill with lettuce, tomato, and Greek yogurt.
  6. Slice and enjoy warm.
