Tuna Avocado Smash on Rice Cakes with Veggies

This Tuna Avocado Smash on Rice Cakes is a light, refreshing, protein-packed meal you can whip up in minutes. It’s perfect for busy days when you want something nourishing, crunchy, and satisfying without turning on the stove.

Ingredients

  • 1 can (5 oz) tuna in water, drained
  • 1/2 medium avocado
  • Juice of 1/4 lime
  • 2 high-fiber rice cakes
  • 1/4 cup cucumber, finely diced
  • 1/4 cup shredded carrots (or matchsticks)
  • Pinch chili flakes (optional)
  • Salt & black pepper, to taste

Directions:

  1. In a small bowl, mash the avocado with lime juice, salt, and pepper.
  2. Stir in the tuna, cucumber, and carrots until well combined.
  3. Spread the mixture evenly over the rice cakes.
  4. Sprinkle with chili flakes if desired and enjoy immediately.
