This One-Pan Mexican-Style Turkey & Black Bean Skillet checks every box: protein-packed, high in fiber, and full of vibrant veggies that support stable blood sugar and steady energy (which is gold in midlife). Whether you’re cooking for yourself or feeding the family, this dish comes together quickly and tastes even better the next day.

Ingredients

  • 1 lb extra-lean ground turkey (99% lean)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 cup frozen corn
  • 1 red bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • 1/4 cup fresh cilantro, chopped
  • 1/8 avocado per serving, sliced
  • Lime wedges

Directions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add onion, bell pepper, and garlic. Cook for 3–4 minutes, until softened.
  3. Add the ground turkey and cook for 5–6 minutes, breaking it apart, until browned.
  4. Add black beans, fire-roasted tomatoes, corn, chili powder, cumin, smoked paprika, salt, and pepper.
  5. Stir to combine, then reduce heat and simmer for 10–12 minutes, until the sauce thickens and the flavors meld.
  6. Top each serving with sliced avocado, fresh cilantro, and a squeeze of lime.
