Black Bean & Roasted Sweet Potato Wrap

These wraps are hearty, colorful, and just the kind of meal that feels good for both body and mind. The sweetness of roasted sweet potato pairs perfectly with earthy black beans and the tang of lime. They’re satisfying enough for dinner but also great prepped ahead for quick lunches.

Ingredients

  • 1 ½ sweet potatoes (washed, unpeeled, cut into 1-inch cubes—1 cup)
  • 3 tbsp avocado oil
  • ¾ cup red onion (chopped)
  • 1 ½ red bell pepper (sliced)
  • 3 cups black beans (cooked, drained, rinsed)
  • 1 tbsp taco seasoning
  • ¼ cup nutritional yeast
  • Juice of 3 limes
  • 6 brown rice tortillas
  • 1 ½ cups romaine (roughly chopped)

Directions

  1. Preheat oven to 400°F. Toss cubed sweet potato with 1 tbsp avocado oil, season with salt and pepper, and roast for 30 minutes, until tender.
  2. Heat 1 tbsp avocado oil in a frying pan over medium heat. Sauté red onion and bell pepper for 3–4 minutes.
  3. Add black beans, taco seasoning, and nutritional yeast. Cook for 5 minutes, then season to taste.
  4. Once sweet potatoes are ready, lay tortillas on a flat surface and layer with roasted sweet potatoes, bean mixture, and romaine.
  5. Roll up tightly, tucking the ends in as you go. Slice in half and serve.
