Garlic Herb Steak Bites with Cauliflower Mash

A cozy, protein-packed dinner that feels indulgent without weighing you down. These juicy garlic-herb steak bites pair perfectly with a creamy cauliflower mash. It’s like comfort food with a metabolic-friendly twist. 🙂

Ingredients

For the Steak Bites:

  • 8 oz sirloin steak, trimmed and cut into 1-inch cubes
  • 1 tsp olive oil
  • 1 clove garlic, minced
  • 1/2 tsp Italian herb seasoning
  • 1/2 tsp lemon juice
  • Salt and black pepper, to taste

For the Cauliflower Mash:

  • 2 cups cauliflower florets
  • 1/4 cup plain nonfat Greek yogurt
  • 1/4 tsp garlic powder
  • 1/4 tsp salt

For Garnish:

  • 1 tbsp chopped parsley

 

Directions:

  1. Prepare the Cauliflower Mash:
    Steam cauliflower florets for 8–10 minutes until tender. Add to a blender or food processor with Greek yogurt, garlic powder, and salt. Blend until smooth and creamy.
  2. Cook the Steak:
    Season steak cubes with salt, pepper, and Italian herbs. Heat olive oil in a skillet over medium-high heat. Add steak and cook 2–3 minutes per side until browned.
  3. Add Flavor:
    Stir in minced garlic and lemon juice; toss for 30 seconds until fragrant.
  4. Serve:
    Spoon steak bites over the cauliflower mash and garnish with parsley.
