Ingredients
- 2 heads of broccoli, chopped (about 4–5 cups)
- 1 can (15 oz) white beans, drained and rinsed
- 1/2 cup raw cashews, soaked*
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- Optional: squeeze of lemon
- *Soak cashews in hot water for 30 minutes or overnight in cold water
Directions
- Soak cashews in hot water while preparing the other ingredients.
- Heat olive oil in a large pot over medium heat. Add onion and cook 5–7 minutes until softened.
- Add garlic and cook 1 minute more.
- Add chopped broccoli and vegetable broth. Simmer 8–10 minutes until broccoli is tender.
- Add white beans, soaked cashews, thyme, salt, and pepper. Simmer 5 minutes more.
- Blend until smooth using an immersion blender or a regular blender (in batches).
- Add more salt, pepper, or a squeeze of lemon to taste.
