Ultra-Creamy Dairy-Free Broccoli Soup

This ultra-creamy dairy-free broccoli soup tastes indulgent enough for a cozy night in, yet it’s made entirely from nourishing whole-food ingredients your midlife body will love.

Blended cashews and white beans create a velvety texture without any cream, while broccoli brings a powerful dose of fiber, antioxidants, and hormone-supportive nutrients. It’s comfort food that’s both soothing and strengthening; a warm reminder that eating for yourself can be both simple and deeply satisfying.

Ingredients

  • 2 heads of broccoli, chopped (about 4–5 cups)
  • 1 can (15 oz) white beans, drained and rinsed
  • 1/2 cup raw cashews, soaked*
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: squeeze of lemon
  • *Soak cashews in hot water for 30 minutes or overnight in cold water

Directions

  1. Soak cashews in hot water while preparing the other ingredients.
  2. Heat olive oil in a large pot over medium heat. Add onion and cook 5–7 minutes until softened.
  3. Add garlic and cook 1 minute more.
  4. Add chopped broccoli and vegetable broth. Simmer 8–10 minutes until broccoli is tender.
  5. Add white beans, soaked cashews, thyme, salt, and pepper. Simmer 5 minutes more.
  6. Blend until smooth using an immersion blender or a regular blender (in batches).
  7. Add more salt, pepper, or a squeeze of lemon to taste.
