This Strawberry Basil Summer Chia Cheesecake Jar is a refreshing, protein-rich treat that tastes like dessert but nourishes like a balanced mini-meal. The mix of strawberries, basil, and lime brings a bright summer flavor, while chia seeds, yogurt, and blended cottage cheese create a creamy, cheesecake-like texture. It’s a perfect feel-good option for midlife women wanting something light yet satisfying.

Ingredients

  • 2 tbsp chia seeds
  • 1/2 cup 0% Greek yogurt
  • 1/4 cup low-fat cottage cheese, blended until smooth
  • 1/3 cup unsweetened almond milk
  • 1/3 cup finely chopped fresh strawberries
  • 1/2 scoop vanilla protein powder
  • 1/2 tsp vanilla extract
  • 1/4 tsp lime zest
  • 2–3 fresh basil leaves, finely chopped
  • Pinch of cinnamon or nutmeg (optional)
  • Toppings: fresh strawberry slices, torn basil leaves, unsweetened coconut or crushed pistachios

Directions

  1. Blend cottage cheese until smooth.
  2. In a jar, combine all ingredients except toppings and stir well.
  3. Refrigerate for at least 4 hours or overnight.
  4. Before serving, top with fresh strawberry slices and torn basil leaves. Add almond milk if needed for desired consistency.
