Ingredients

For the Salmon
  • 4 salmon fillets (6 oz. / 170g each)
  • 2 teaspoons olive oil
  • Salt and black pepper, to taste
  • 2 tablespoons butter
  • 2 tablespoons honey

  • 1 mango, diced
  • 1 red bell pepper, diced
  • ½ red onion, diced
  • Handful of fresh cilantro, finely chopped
  • Juice of 1 lime
  • ¼ teaspoon salt, or to taste

Directions

  1. In a medium bowl, combine the diced mango, red bell pepper, red onion, cilantro, lime juice, and salt. Mix well and set aside.
  2. Pat the salmon fillets dry with paper towels.
  3. Rub the salmon with olive oil and season generously with salt and pepper.
  4. Melt the butter in a large non-stick skillet over medium heat.
  5. Stir in the honey until combined.
  6. Place the salmon fillets in the skillet and cook for 5–6 minutes.
  7. Carefully flip the salmon and continue cooking for another 6–8 minutes, until the salmon is caramelized on the outside and flakes easily with a fork.
  8. Remove from the heat and transfer to serving plates.
  9. Spoon the mango salsa generously over each salmon fillet.
  10. Serve immediately.
