This Creamy Avocado Chickpea Toast is a tasty, healthy, and nourishing meal perfect for breakfast, lunch, or a light dinner. Chickpeas add a creamy texture while boosting fiber and protein, making it a satisfying choice for midlife wellness.

Ingredients

  • 2 large ripe avocados
  • 1 15-oz. can chickpeas, rinsed and drained
  • 1 medium lemon
  • ½ t. garlic powder
  • Sea salt and black pepper, to taste
  • ¼ c. parsley, chopped (+ more for garnish, if desired)
  • 6 large slices whole-grain bread, toasted
  • ½ c. Greek yogurt (or coconut yogurt for vegan option)

Directions

  1. Slice avocados in half, remove seeds, and scoop flesh into a medium mixing bowl. Add chickpeas and mash with a fork, leaving a few chunks for texture.
  2. Roll lemon on the counter, cut in half, and squeeze juice over avocado-chickpea mixture. Add garlic powder, salt, pepper, and parsley. Mix thoroughly.
  3. Divide mixture evenly over the 6 slices of toasted bread. Top each slice with a dollop of Greek yogurt and sprinkle with extra parsley if desired. Serve immediately and enjoy!
