If you’re looking for a satisfying breakfast that helps keep you full, supports muscle maintenance, and stabilizes blood sugar, this Cottage Cheese Protein Omelet is a fantastic choice. Cottage cheese adds extra protein and creaminess, while spinach provides important vitamins and minerals. Ready in just 15 minutes, this delicious omelet is perfect for busy mornings and a great addition to any midlife wellness routine.

Ingredients

  • 2 large eggs, beaten
  • ¼ teaspoon salt, divided
  • ¼ teaspoon black pepper, divided
  • 2.5 oz (70g) cottage cheese
  • 1 teaspoon Italian herbs
  • 2 teaspoons butter
  • 1 oz (30g) baby spinach
  • 1 small garlic clove, peeled and crushed
  • 2 teaspoons olive oil
  • 2 tablespoons freshly grated Parmesan cheese
  • 1 tablespoon green onion, sliced

Directions

  1. Crack the eggs into a small bowl and beat until well combined. Season with a pinch of salt and pepper. Set aside.

  2. In a separate bowl, combine the cottage cheese, Italian herbs, and the remaining salt and pepper. Mix well and set aside.

  3. Heat a non-stick skillet over medium heat and add the butter.

  4. Once the butter has melted, add the spinach and garlic. Sauté for 1–2 minutes, until the spinach wilts. Remove from the skillet and set aside.

  5. Return the skillet to medium heat and add the olive oil.

  6. Reduce heat to medium-low and pour in the beaten eggs. Tilt the pan so the eggs spread evenly across the surface.

  7. As the edges begin to set, gently lift them with a spatula, allowing the uncooked egg to flow underneath.

  8. Once the center starts to set, sprinkle the Parmesan cheese over the omelet. Top with the cooked spinach and cottage cheese mixture.

  9. Fold the omelet in half, reduce the heat to low, and cook for another 1–2 minutes until heated through.

  10. Carefully slide onto a serving plate, garnish with sliced green onions, and serve immediately.

Pro Tips & Swaps

  • Use full-fat cottage cheese for a creamier texture and greater satiety.
  • Add mushrooms, bell peppers, or tomatoes for extra vegetables.
  • Swap Parmesan for feta cheese for a Mediterranean twist.
  • Increase protein further by adding a few ounces of cooked chicken or turkey.
  • Fresh herbs such as basil, parsley, or chives can replace Italian seasoning.

Storage Tips

  • This omelet is best enjoyed fresh.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 24 hours.
  • Reheat gently in a skillet over low heat or microwave in 30-second intervals until warmed through.
  • Avoid freezing, as the texture of the eggs and cottage cheese may change.
