- 1 oz (30g) baby spinach
- 1 small garlic clove, peeled and crushed
- 2 teaspoons olive oil
- 2 tablespoons freshly grated Parmesan cheese
- 1 tablespoon green onion, sliced

Crack the eggs into a small bowl and beat until well combined. Season with a pinch of salt and pepper. Set aside.

In a separate bowl, combine the cottage cheese, Italian herbs, and the remaining salt and pepper. Mix well and set aside.
