Ingredients

  • 1 medium head broccoli, chopped (about 3 cups) (300g)
  • 1 (15 oz) can chickpeas, rinsed (255g)
  • 1 orange bell pepper, chopped (120g)
  • 2 ribs celery, chopped (100g)
  • 1/3 cup chopped red onion (50g)
  • 1/4 cup sunflower seeds (35g)
  • 3 oz crumbled feta cheese (85g)

Dressing

  • 1/4 cup tahini (60g)
  • 1 tbsp water (15ml, plus more as needed)
  • 1 tbsp monk fruit sweetener (to taste) (12g)
  • 4 tbsp lemon juice (60ml)
  • 1 garlic clove, minced (3g)
  • Kosher salt and pepper (to taste)

Directions

  1. Combine broccoli, chickpeas, bell pepper, celery, and red onion in a large bowl.
  2. Whisk together all dressing ingredients until smooth. Add more water as needed for desired consistency.
  3. Pour dressing over salad and toss well.
  4. Top with sunflower seeds and crumbled feta cheese.
  5. Let sit for 15–20 minutes before serving to allow flavors to meld.
