High-Protein Waffles with Greek Yogurt & Berries

These High-Protein Waffles might become your new morning hero. They’re fluffy, satisfying, and packed with enough protein to keep your blood sugar steady and your mood stable (yes, please). With Greek yogurt, blended cottage cheese, and protein powder all working together, this is a breakfast that actually supports your postmenopausal body instead of working against it. And the best part? They taste like a treat while giving you energy that lasts.

Ingredients

  • 2 large eggs
  • 1 tbsp vanilla extract
  • 1/4 cup plain 0% Greek yogurt
  • 1/4 cup low-fat cottage cheese, blended smooth
  • 2 scoops vanilla protein powder
  • 1 tsp baking powder
  • Cooking spray
  •  

Directions:

  1. Preheat waffle maker according to manufacturer’s instructions.
  2. In a bowl, whisk together eggs and vanilla extract.
  3. Add Greek yogurt and blended cottage cheese, mix until smooth.
  4. Whisk in protein powder and baking powder until well combined.
  5. Let batter sit for 2-3 minutes to thicken.
  6. Spray waffle maker with cooking spray and pour batter to fill each section.
  7. Cook for 3-4 minutes until set and lightly crispy.
  8. Top each serving (2 waffles) with Greek yogurt, mixed berries, and sliced almonds.

Toppings:

  • 1/4 cup plain 0% Greek yogurt
  • 1/2 cup fresh mixed berries (strawberries, blueberries, raspberries)
  • 2 tsp sliced almonds
  • Sugar-free syrup (optional)
