This Korean-inspired Bibimbap Bowl is a vibrant, protein-forward meal that brings together crisp veggies, savory lean beef, and a perfectly fried egg, all tied together with a bold gochujang sauce.

Ingredients
- 8 oz extra-lean ground beef (95/5)
- 1 cup cooked brown rice
- 2 cups baby spinach
- 1 cup shredded carrots
- 1 cup sliced cucumber
- 1/2 cup bean sprouts
- 2 eggs
- 2 tsp sesame oil, divided
- Cooking spray
- 1 tbsp sesame seeds
Gochujang Sauce
- 1 tbsp gochujang paste
- 1 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp honey or monk fruit sweetener
- 1 clove garlic, minced
Directions
- Whisk together all sauce ingredients in a small bowl. Set aside.
- Heat 1 tsp sesame oil in a skillet over medium-high heat. Cook ground beef, breaking apart, for 5–6 minutes until browned. Season with salt and pepper.
- In the same pan, wilt spinach briefly. Set aside.
- Spray a nonstick pan with cooking spray. Fry eggs to your liking (sunny-side up or over-easy).
- Divide brown rice between 2 bowls.
- Arrange beef, spinach, carrots, cucumber, and bean sprouts in sections over rice.
- Top each bowl with a fried egg.
- Drizzle with gochujang sauce and sprinkle with sesame seeds.
