It’s a perfect grab-and-go breakfast for busy midlife women who want energy, satiety, and steady blood sugar to start the day strong.

Ingredients

  • 2 tbsp chia seeds
  • 1/4 cup rolled oats
  • 1/2 cup unsweetened almond milk
  • 1/2 cup 0% Greek yogurt
  • 1/2 scoop (15g) vanilla protein powder
  • 1/3 cup fresh blueberries
  • 1/2 tsp lemon zest
  • 1/2 tsp vanilla extract

Directions

  1. In a mason jar, combine almond milk, Greek yogurt, chia seeds, oats, protein powder, vanilla extract, and lemon zest.
  2. Stir in blueberries.
  3. Refrigerate overnight or at least 4 hours.
  4. Add more almond milk if too thick before serving.
