Combining eggs, tuna, cream cheese, and cheddar cheese, this savory omelet delivers plenty of protein with minimal carbohydrates. Ingredients

  • 2 tablespoons olive oil, divided
  • ½ red bell pepper, diced
  • ½ green bell pepper, diced
  • 3.5 oz (100g) tuna in spring water, drained
  • 2 tablespoons cream cheese
  • 6 eggs
  • Salt and pepper, to taste
  • 4 tablespoons cheddar cheese, shredded
  • 1 tablespoon fresh chives, chopped

Directions

  1. Heat 2 teaspoons of olive oil in a skillet over medium-high heat.
  2. Add the red and green bell peppers and sauté until they begin to soften, about 3 minutes.
  3. Remove the peppers from the heat and place them in a medium bowl.
  4. Add the tuna and cream cheese to the peppers and mix well. Set aside.
  5. In a separate bowl, beat the eggs and season with salt and pepper.
  6. Heat another 2 teaspoons of olive oil in the skillet over medium-high heat.
  7. Pour in half of the beaten eggs and cook without stirring until the edges begin to set.
  8. Using a silicone spatula, gently push the cooked edges toward the center while tilting the skillet so uncooked egg flows to the edges. Continue until the omelet is mostly set but still slightly soft in the center, about 6 minutes.
  9. Spoon half of the tuna mixture onto one half of the omelet and sprinkle with 2 tablespoons of cheddar cheese.
  10. Carefully fold the omelet in half and gently press the edges together until sealed.
  11. Transfer to a serving plate and garnish with half of the chopped chives.
  12. Repeat the process with the remaining ingredients to make a second omelet.
  13. Serve immediately.
