This crisp, cooling summer salad is the perfect balance of creamy avocado, refreshing cucumber, and bright herbs. A hydrating, fiber-rich dish ideal for hot days or anytime you want something light and bloat-friendly. Ingredients

  • 2 large English cucumbers, sliced into half-moons (600g)
  • 2 ripe avocados, diced (300g)
  • 1/2 medium red onion, thinly sliced (50g)
  • 1/4 cup fresh dill, chopped (4g)
  • 2 tbsp fresh mint leaves, chopped (3g)
  • 2 tbsp fresh parsley, chopped (3g)

Dressing

  • 1 tbsp extra virgin olive oil (15ml)
  • 2 tbsp fresh lemon juice (30ml)
  • 1 tbsp apple cider vinegar (15ml)
  • 1 tsp Dijon mustard (5g)
  • 1 clove garlic, minced (3g)
  • 1/2 tsp sea salt (2g)
  • 1/4 tsp black pepper (0.5g)
  • 1 tsp honey (optional) (7g)

Directions

  1. Wash and slice cucumbers into half-moons about 1/4-inch thick.
  2. Dice avocados into bite-sized pieces and thinly slice red onion.
  3. Combine cucumbers, avocados, and red onion in a large serving bowl.
  4. Whisk together olive oil, lemon juice, apple cider vinegar, Dijon mustard, garlic, salt, and pepper.
  5. Pour dressing over salad and gently toss to coat all ingredients.
  6. Sprinkle with fresh dill, mint, and parsley before serving.
  7. Serve immediately for best texture and freshness.
